Cucumber-Avocado-Mango Salad, Serves 4
Ingredients:
1 cucumber, chopped (can omit for kapha)
1 avocado, chopped
1 mango, chopped
1 small tomato, chopped
2 tablespoons raw honey
2 tablespoons warm water
1 teaspoon crushed, minced, fresh
ginger
Pinch rock salt
1/4 lemon
1/4 lime
Black pepper
Chopped cilantro to garnish
What to do;
1. Mix avocado, cucumber, mango and tomato in a bowl.
2. Dressing: dissolve honey in warm water, add fresh ginger. Add rock salt and squeeze in lemon and lime. Add freshly ground black pepper. Drizzle over salad.
Garnish with cilantro.
