Bliss Balls, Makes 8-12 balls
Bliss Ball I
Ingredients:
4 dried apple pieces, about . cup (60 ml) coarsely chopped
4 Medjool dates, pitted
4 dried unsulfured Turkish apricots, coarsely chopped
1 tablespoon ground walnuts
1 tablespoon almond butter
1/4 teaspoon cinnamon
1/8 teaspoon dry powdered ginger a few gratings of lemon or orange rind (optional)
2 tablespoons dry flaked coconut, ground to a powder, or 2 tablespoons finely chopped walnuts for coating
What to do;
1. Process all ingredients in a food processor, until all fruits are ground and the mixture is sticky. Roll into 1 inch balls.
2. Roll the balls in the ground coconut or finely chopped walnuts. Store in a covered container in the refrigerator.
Variations: Carrot Bliss Balls
Steam 1/4 cup (60 ml) chopped carrots for 5 minutes until soft. Add to the food processor with the other ingredients. If the mixture is too moist, add a little ground coconut to firm up. Pulse to combine.
Bliss Ball II
Ingredients:
3 dried unsweetened pineapple rings, shredded into small pieces
5 dried unsulfured Turkish apricots, coarsely chopped
1/4 cup (60 ml) dried sweetened cranberries
2 tablespoons ground walnuts
2 tablespoons almond butter
1/4 teaspoon cinnamon
1/8 teaspoon dry powdered ginger
2 tablespoons dry flaked coconut, ground to a powder, or 2 tablespoons finely chopped walnuts for coating
Bliss Ball III
Ingredients:
3 dried Turkish figs, coarsely chopped
5 dried unsulfured Turkish apricots, coarsely chopped
1 tablespoon ground walnuts
1 teaspoon toasted sesame seeds
1 tablespoon almond butter
1/4 teaspoon cinnamon
1/8 teaspoon dry powdered ginger
2 tablespoons dry flaked coconut, ground to a powder, or 2 tablespoons finely
chopped walnuts for coating
