餐廳裡有很多前線的可人兒為你服務,但廚房走出來的卻少有女性的身影。隨著近年食/甜品的流行,Facebook 內你總有幾個朋友,不時將自己用心煮出的美食拍照分享。如果那個是你,或者你有喜愛煮食的朋友,Lakshmi Harilela 的經歷可能為你帶來一點啟示。今天的 Lakshmi Harilela 擁有幾個身份,既是 HKU SPACE的兼職導師,亦是烹飪課導師。

 

少少背景

Lakshmi Harilela 在1999年於香港完成中學課程後往瑞士以及美國升學,其後回港於香港怡東酒店擔任調酒員及廚師,香港洲際酒店擔任烘焙師及主管廚師 (Line Chef) ,現於自己開設的餐廳提供私人廚師等不同的服務。

 

酒店工作與自立門戶的開始

Lakshmi Harilela 工作過的兩家酒店,均會為廚師提供培訓及技術交流的機會,例如廚師比賽。不過,酒店要求的餐桌禮儀和菜式都有一套標準。雖然廚師都有鑽研和分享菜式的機會,不過多數情況都是跟從酒店要求,為客人烹調既定的菜式。另帶一提,香港的酒店廚師可以由初級做起,月薪約15,000萬元,晉升機會與資歷相關,也重創意。

為了在餐桌服務和菜式上有更多發揮空間,Lakshmi Harilela 開始自立門戶,做她喜愛的有機私房菜。2004年的香港人不像今天般著重健康,以前年輕人在周末會相約去唱K,今日就會去跑步。2004年Lakshmi Harilela 主打有機私房菜,食足幾年西北風,當時很多人連有機 (Organic) 是什麼都不知道。為了客人可享有較多用膳空間,唯有將自己的用武之地闢得有幾小得幾小,在陝小的廚房內烹煮食物是Lakshmi Harilela沒有在酒店中遇過的。就像手機程式一樣,5年前已經有人開發,今天手持5年手機程式開發經驗的人已是行內老手。Lakshmi Harilela 10年多前就做有機烹調的開荒牛,今天已有一班捧場客。

 

記得她提了一句

餐廳或酒店內的工作五花百門,廚師也分好幾種,酒店廚師的晉升制度較分明,初級廚師兩年左右升一級,之後就看實力和際遇。了解自己的目標,然後就一步步前進吧!

Pasta Making Class at CCC Kung Lee College

Today's class was filled with enthusiastic students learning the art of pasta making .  

We aimed at a basic roux and from there built a beautiful white sauce using a mirepoix and cream. The students also learnt the art of kneeding dough and various textures were created. All in all a successful class.

Masala Okra - serves 4

This recipe tantalises the tastebuds and is excellent for pitta and kapha. Okra is an excellent laxative and lubricates the gut, making digestion easeful. It has also been known to help with arthritis conditions. 

Ingredients:

  • 1 bunch okra, chopped into thirds
  • 2 tbsp. ghee (preferably organic) 
  • 1 yellow onion, chopped
  • 1 tbsp. ginger & garlic paste
  • 2 tomatoes, roughly chopped
  • 1 tsp. coriander powder
  • 1 tsp. turmeric powder
  • 1 tsp. chilli powder 
  • optional; 2 green bird's eye chilies
  • salt and pepper to taste
  • coriander leaves and spring onions (small bunch chopped roughly.) 

what to do;

In 1 tablespoon ghee, stir fry the okra for 3 minutes. This step helps them dry out the insides;  Set aside. In the same pan, add the rest of the ghee, the chopped onions and cook until the onions turn slightly golden and soft. Add the ginger/garlic paste and continue to cook for additional 3 minutes until all flavours are enhanced. Add the chopped tomatoes until they become soft and have imparted their acidic nature. Lastly add all the spices and let them cook for 1 minute. Make sure the okra is soft to the bite. Lastly add the coriander leaves, chilies and spring onions, cook for an additional 30 seconds then turn off heat.You can add a little water if it is too dry. Season with salt and pepper and serve. 

* this dish is great with rice or chapati, and can be put into a sandwich for the next day.
