Serves 4 to 6, Preparation time: 20 – 25 minutes


  • 1 8 oz. package 100% buckwheat soba noodles
  • 1 medium onion
  • 2 tablespoons cold-pressed sesame oil
  • 1 large clove garlic minced
  • 2 tablespoons tamari
  • 1 tsp. mirin
  • 1 . cups red cabbage, thinly sliced
  • 1 . cups Chinese cabbage, thinly sliced
  • 1 cup match stick carrots, bell peppers (for sweetness)
  • 1 tsp. sea salt
  • 1 cup ground toasted sesame seeds
  • Optional: white pepper


Put a large pot of water on to boil for the noodles. (Covering it will speed cooking time and save

energy.) Put into boil for 10 mins the soba noodles Chop in cross wise slices:. medium onion

Sauté the onion over low heat until tender, not brown, with: 2 tbsps. cold-pressed sesame oil, 

large clove garlic minced, 2 tbsps. tamari, 1 tsp. Mirin. Wash and chop , 1 . cups red cabbage, thinly sliced, 1 . cups, Chinese cabbage, thinly sliced,

Optional: . cup match stick carrots, bell peppers (for sweetness)

Stir the red cabbage into the oil and cook covered over medium heat until almost done, about 6 to 8 mins. Add the Chinese cabbage (carrots, bell peppers) and: 1 tsp. sea salt Cover and cook for another 2-3 mins. Remove from heat when done.

When the noodles are done, toss them with the sautéed vegetables in a large serving bowl. Garnish with: . cup ground toasted sesame seeds, optional: white pepper.
