Spaghetti with Green Sauce

Serves 4


1 bunch fresh spinach or chard

1/2 cup (125 ml) water

1 pound (450 g) spaghetti or other pasta

2 tablespoons olive oil

1 cup (250 ml) fresh basil

1/2 cup (125 ml) fresh parsley

1 cup (250 ml) toasted walnuts or pine nuts

1/4 cup (60 ml) olive oil



What to do;


1. In a saucepan, steam greens with water until they wilt, for about 5-10 minutes. Do not overcook.

2. Boil 6 quarts (6 L) of water in a large saucepan. Cook pasta for about 10 minutes until el dente. Strain pasta, add olive and mix thoroughly.

3. In a blender, blend greens with fresh herbs, walnuts and olive oil until sauce is smooth. Season with salt. Mix sauce with pasta. Serve with Cauliflower Balls.
