Poached Pear with Blueberry Sauce

Serves 4

Step 1

1 beet, peeled and sliced

4 whole pears, peeled

1/2 cup (125ml) sugar

1 cinnamon stick

1 whole cardamom pod

1 vanilla bean

Step 2 - Sauce

2 tablespoons ghee

4 ounces (120g) fresh blueberries

1 tablespoon brown sugar

1/4 teaspoon Stevia extract

1/2 teaspoon cinnamon powder

1/4 teaspoon nutmeg powder

1/4 teaspoon vanilla extract

8 mint leaves for garnish


What to do; 

1. Boil enough water in a stock pot to cover pears. Add beet and pears and

simmer. Add . cup sugar, cinnamon stick, whole cardamom, vanilla bean, and

simmer until pears gets tender, for about 15-20 minutes.

2. Sauce: Melt ghee in sauce pan and add blueberries. Add 1 tablespoon sugar

and Stevia and stir. Add cinnamon powder, nutmeg powder, and vanilla extract.

Cook for 2-3 minutes.

Serving: Cut pears in half, top with blueberry sauce, and garnish with mint leaf.
