Oatmeal Latkes (Pancakes)
Oatmeal Latkes are savory pancakes that can be served with sweet or savory toppings. For a sweet experience, use maple syrup, jam or Dried Fruit-Nut. You can even change the oat flour to spelt, coconut or rice.
Snack Spread (see recipe). For savoury options you can top with salsa, chutney,or pesto. These latkes are a little heavy and most suitable for Vata and Pitta.
1 cup (250 ml) quick oats
1/2 cup (125 ml) water
1/3 cup (80 ml) crumbled panir, or .
cup (125 ml) crumbled firm tofu
1/3 cup (80 ml) cow’s milk*, soy milk,
coconut milk, or almond milk
1/2 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
Oil or ghee for frying
What to do;
1. Combine oats and water in a small bowl. Stir briefly until slightly creamy
2. Combine the panir or tofu, milk, salt, turmeric, cumin and coriander in a
blender and blend until smooth. (Note: Less panir is used because it is much
denser than tofu. Also, different milks have different thicknesses, whole coconut
milk being much thicker than the other choices. When using panir, and especially
if using it in combination with coconut milk, you will probably need to add a little
extra water to the blender to make the mixture pourable.)
3. Add mixture to the oats, and stir to combine. The batter should be thick like
pancake batter. You can add a little more water to thin if necessary.
Heat about 1 teaspoon oil in a large frying pan (cast iron works best) on mediumlow
heat. Spoon about 2 heaping tablespoons of batter into the pan for each of 4
latkes. Fry until mostly dry on top and brown on the bottom, about 3 to 4
minutes. Add more oil if necessary. Flip over to brown on other side. Turn the
heat down low when removing the latkes from the pan so the oil does not burn.
Repeat for the remaining 4 latkes. Raise the heat when the next batch has been
added to the pan. Serve immediately. Makes 8 latkes.
Serving suggestion for tiny tots: You can make the latkes mini-size, about 1 to 2 inches in diameter. Little children love finger food.
