Lemon Rice, Serves 4



2 tablespoons ghee

1/4 teaspoon urad dal

1 teaspoon cumin seeds

1 cup (250 ml) basmati rice

2 cups (500 ml) hot water

1/2 teaspoon turmeric

1/2 teaspoon salt

1/2 cup (125 ml) cooked chickpeas

1/4 cup (60 ml) lemon juice


What to do;

1. Heat ghee in a medium saucepan. Add urad dal, cumin seeds, and fry over low heat until they are brown.

2. Add rice and fry stirring it constantly for 2-3 minutes. Add the hot water, turmeric, and salt and bring to a boil while uncovered. Cover and simmer on low heat until water is absorbed and rice is tender, about 20 minutes.

3. Remove from the heat and fold in lemon juice and chickpeas. Allow to stand covered for 3 minutes.
