Makes about 5 cups

 

1/4 cup (60 ml) apple juice concentrate

1/4  cup (60 ml) sunflower oil

1/4 cup (60 ml) maple syrup, or brown rice syrup

1/2 teaspoon vanilla or almond extract

1 teaspoon molasses

4 cups (1000 ml) rolled oats

1/2 cup (125 ml) sunflower seeds or chopped almonds

1/2 teaspoon cinnamon

Pinch salt

1/2 cup (125 ml) raisins, currants, or chopped dates

 

What to do; 

1. Preheat oven to 325 ℉ (160 ℃).

2. Combine apple juice, oil, maple syrup, vanilla, and molasses in a small bowl.

3. Combine oats, almonds or sunflower seeds, cinnamon and salt in a large roasting pan. Pour the liquid over the dry ingredients and toss to thoroughly coat. Place pan in the oven and bake until golden brown, about 30 minutes, stirring every 10 minutes. Let cool in the pan for 45 minutes, stirring occasionally.

4. Stir in the fruit. Store in an air-tight container.

Snack Serving Suggestion:

Cut an apple into slices. Spread one side with nut butter. Dip nut butter side into Granola to coat.
