Ingredients:
1/2 cup (125 ml) walnuts
1/2 cup (125 ml) quick oats
1/4 cup (60 ml) semolina flour
1/4 cup (60 ml) coconut palm sugar
1/4 teaspoon cardamom
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoons ghee
2-3 tablespoons coconut milk
1 tablespoon ghee
3 cups (750 ml) fruits, peeled and
chopped (apple, peach, and blueberries)
Pinch cardamom
Pinch cinnamon
Pinch nutmeg
2 tablespoons coconut palm sugar
What to do;
Preheat oven to 415℉ (210℃). Grind walnuts in a coffee grinder. Combine walnuts with oats, semolina flour, sugar, nutmeg, cardamom, cinnamon in a baking dish. Add ghee and a little coconut milk and mix until it clumps together. Spread mixture in an 8-inch (20 cm) square baking dish evenly and flatten with your hands. Bake for 10 minutes, until lightly brown.
Melt ghee in a skillet on medium heat. Add spices and fruits. Sauté fruit while stirring for a few minutes. Add water if necessary. Cover and cook for 10 mins. Add sugar according to taste.
Scoop fruit into serving bowl and top with crisp.
