Laddu (Chickpea Flour Confection), Makes 24 Balls
1 cup ( 250 ml) ghee
2 cups (500 ml) chickpea flour
2 cups (500 ml) powdered sugar
1 teaspoon cardamom powder
1/2 cup (125 ml) ground blanched almonds
2 tablespoons dried grated coconut
What to do;
1. Melt ghee in a heavy saucepan or a large cast-iron skillet over moderately low heat. Add the chickpea flour and cook, stirring constantly, for 20 to 30 minutes, until slightly darkened.
2. Remove from heat. Stir in sugar, cardamom, and almonds. When just cool enough to handle, roll into 1-inch (2.5 cm) balls. The balls should just barely hold together. Do not wait for the mixture to cool completely or the ghee will harden and you will not be able to form the laddus. Sprinkle coconut on top.
